1.2 Definition and the Innovation in the Hotel Industry

Innovation means introducing a new thing to the world. Innovation is generally taking place to offer improved product and services to the customer as well as organizational business gaining. As per Jones (2008),“Innovation is the new ways of doing the regular things, or unique or better combinations of the production elements.” To attract customers and grow their business, hoteliers are doing research and development activities to come up with innovative product and services. People prefer herbal product in comparison to the chemical product. Example, in body care product or in food and beverage product, most people buy herbal and eco-friendly materials only. In the recent years, the social activist, environmental agencies and group those are conscious about the green earth taking initiatives and pressuring all industry to reduce their process that is affecting to the environment.

In the hotel industry, there are major five elements where innovation is take place. It can be product and service innovation, process innovation, logistics innovation, market innovation or institutional innovation.

  1. Product and service innovations: For sustainable growth and to achieve remarkable bottom line, it is needed strategic development in the field of product and service innovation.
  2. Process Innovations: New ways of services are creating by the hotelier to offer to the customers. In the unique service delivery process, customers are also taken into consideration for new role. Hotels upgrading their flow of work process with adopting technology, like automated services for front and back office. Because of the process innovation there is improvement in the efficiency in the delivery of services to the customer.
  3. Process Innovations in Information Handling (Logistics Innovation): The flows of information in the organization are now getting faster.  Due to busy schedule of guest, hotelier is providing complete information in the internet so that it will be easier for them to book a suite from a single window. Now hoteliers are managing supply chain relationship with travelling agents, courier services, and tourism so that it will be convenient for guest.
  4. Market Innovations:  Promotional activities play an important role for any firm.  To connect with the customers, now hoteliers are adopting new modes of communication. Making strategic partnership with the tourism and travel agents, together promoting co-brand values.
  5. Institutional innovations: There is an emergence of innovative ways of providing financing support to the firm's investments. Firms need budgets and capitals to introduce new products, promotional marketing, and collaboration with potential partners.

There are five influencing elements of innovation in the hotel 

1.3.1 Innovation supporting process

A meticulous strategic planning is required for radical innovation, for which enough budgets and capital is required. There should be well developed employees' evaluation and compensation plan to motivate them. Knowledge management and Training and development are also required to encourage every individual in the firm to contribute towards business strategy.

In the fierce competition, firms need to adopt well developed marketing strategy.  Building guest loyalty, providing greater customer satisfaction, connect with the customer emotions, earning the high value of guest experience, adopting latest trends in the hotel, are the major elements   that a hotelier should focus on for strategically development of market initiatives.

How a guest is treated by an hotelier is most important. Guest is always satisfied by the personal attention by the staffs of the hotel. But it is differ from person to person. For different age group, different kind of attention is required. Example, kids prefer electronics more than the personal attention and they insist their parents to go such place. For personalization, loyalty programs offer a great opportunity to invite more number of customers. Adventure tourism is also one of the activity based travel trends. The main focus of this activity based travel is to stay lean and green by going to famous parks, hiking, and participating in other adventure activities. Keeping this in mind, now hoteliers are offering easy vehicles in affordable price or in free to the guest to explore the places nearby. People go for heritage tourism also to celebrate any famous area, community or historical place.

The perceptions of the people about the price have changed and due to the up and down of economic graph they are more concern about the product and quality for which they are paying. So, people are comparing the value what they are getting and what they are paying. But the most important concern for hoteliers is to increase value with the same price which required innovation in product, process, logistics, and marketing communication and institutional.  There are mostly five factors which create value to a customer while staying at hotel as given below:

  1. Guest room design:  Hotelier can create innovation in the guest room design in terms of size of the room and comfort level.  Staffs of the hotel should pay attention towards cleanliness of the room other moving areas of the guests. Room of the guest should be decorated with the classic equipments. The lighting system, curtains and the arrangement of the entertainment should be according to the taste of the guest.
  2. Physical property: The interior and exterior architecture of the hotel also creates value to a hotel. 
  3. Interpersonal Service: The staffs of the hotel need to show service friendliness, extra attentiveness to potential customers. There is a need for every organization to promote innovation and creativity within and amongst their employees. This required reconciliation of the imperative demands to increase efficiency, improve quality and raising productivity. This creative process is very complex and chaotic nature which involves employee generating new ideas and concepts, or new connections of existing ideas and concepts.

According to Teresa Amabile (1998):

“Creativity that exists within every individual is a function of three components: expertise, creative thinking and motivation.”

Expertise comes from the experience. Over the years employee engages in a function and   acquired depth knowledge in that field. This knowledge comes through not only from formal education but also through practical experience in the job activities and from interaction with other professionals. Now a day in every firm they encourage the knowledge sharing program (KSP) to share experience and knowledge of an employee to all others. Doing this type of activities, it nourishes the scrutiny of difficulties and problems by creating an intellectual space. Employees get more dynamic and aware to find solutions of any problems.

Creative thinking is comes from practices. It is a skilled and determined thought process which identifies the flexibility and imaginative capability of an individual to tackle a problem. Hotels are tried to differentiate themselves through different trends like boutique hotel, energy spa, no pet friendly initiative, resurgence of traditional wines and eco friendly hospitality initiatives. Eco-friendly is now a buzz word for every industry including hotel industry. Some of the eco friendly practices features are eco friendly hotels harmonize with nature, truly green hotels support the environment, eco - accommodation helps minimize consumption of materials, proactive environmental policy, and eco - friendly hotel won't sacrifice  luxury and room comfort. 2 Chapter Three-Methodology

2.1 Introduction

There are several research methods out of which one method is to be chosen to achieve the research objectives. So, in the first section, all type of research methods (Experiment, Survey, Action research, Case study, and Ethnography) is discussed. Chosen research design is discussed in the second section and the rational for choice is justified. In the next section where it is explain about sampling size, questionnaire and other details. Ethical and moral issues are explained in the last section.

In this research paper there is mainly two stages. In the initial stage (chapter two), the available literature has analyzed. In this chapter the basic concept on theories of definition and innovation in the hospitality sector has reviewed. At first stage, it has already explained about employee contribution and organizational motivations towards innovative strategy. In this stage also it included about the evaluation of various environmentally friendly innovation for products and services that instituted in hospitality sector and mostly in hotel industry.

In the second stage, hotel Cavendish London has taken for setting up example in eco pioneering since 2007. Interaction with the employees of the hotel Cavendish, it can be explored about organizational motivations and contributions towards new products and services which they have instituted will be determined. Through this project, the innovative character of the hotel Cavendish will be explored in green developmental strategy.

2.2 Types of Research Methods

Researchers are guided by undertaking various research methods to meet their research objectives. According to Saunders et al (2007, p. 135), it is explained that these research methods are very important to take business  decisions. Experiment, survey, action research, case study and ethnography are the major research methods adopted by the researchers to collect data and then analyze.

2.2.1 Experiments

Experiment is a very systematic and scientific method where the researcher used to manipulates one variable and randomizes the other variables to understand the phenomena. Experimental   research is mainly used where there is time priority in a casual relationship, the magnitude of the correlation among variables is great or where, there is consistency in a casual relationship.

2.2.2 Survey

This research method involves the questionnaires approach or statistical surveys to collect data. In this method, insights of customer are collected including their thoughts and behaviors. According to Tharenou et al (2007, p.47) explained that the survey approach direct to measure the relationship between a dependant variable and several independent variables.

2.2.3 Action Research

2.3 Research Design and Rationale for choice of research method

There are various research methods, that already been discussed in the methodology of research techniques.  This dissection required mostly qualitative method to meet its objectives. It may be because of the fear of losing the job or losing the reputation or the risk of civil prosecution. Employee of a firm generally avoid from such breaches. The staffs of the firm are bound to follow the rules and regulation and to keep folded about certain confidentiality data. They are supposed to project the company image positively in the public place. So the data collected from the employees may be manipulated.  Such kind of data may not be reliable for the research objectives.

Employee of the Cavendish says without compromising in luxury treatment, this eco hotel has won Gold Green Awards and according to them it means a lot to them. It proved that they has hit all areas such as reduction measures in energy consumption through efficient lighting and condensing boilers, fair-trade products which has been used throughout the hotel, and the menu of restaurant that features fish from sustainable and reliable sources and local produce.  Hotel Cavendish has gone extra mile in advocating the environmentally friendly approach. It is encouraging the delegates at meetings to adopt green culture. In the meeting topics includes the carbon offsetting fee, to give 50% discount to the environmentally friendly cars in the hotel's parking, encouragement of non paper based communication, and recycling of paper. It has fixed recycling bins everywhere and guests and staffs are encouraged to use them sincerely. Mobile phones are charged with wind up chargers in the hotel premise. For eco friendly stationery are used in the hotel. In the every small details are scrutinize with respect to green practices.

3 Chapter Four-Finding and Analysis

3.1 Finding

Since 2007, Hotel Cavendish has through conscious efforts to go green, reduced significantly in its consumption of water, gas and energy.  Through its eco-friendly deeds it is saving nearly £ 20,000 annually in 2007. Hotel has increased its recycling process of cardboard by 353%. Up to 13%, it has achieved the waste reduction to landfill. The financial figure shows a positive sign for its eco-friendly working practices and makes combined sense for both economically and environmentally.  When making travel and holidays plans, the customers of UK are considering sustainability problems. Therefore, hotel is taking best efforts to handle these issues and rate for pricing has made transparent including evidence of the environmental policy. The hotels breakfasts are prepared from organic yoghurts and fruit juices giving fantastic experience to the dinning. In the menu of the hotel, they advertise the local foods and its source of procurement from farm.

Government of UK is helping the industries to implement eco- friendly practices. The Mayor of London taking initiatives and supporting green tourism. The staffs and management of hotel are getting trained about green practices and according to make small changes in the work. The hotel has replaced existing light bulbs with low energy bulb to reduce energy consumption. 3.2 Analysis

It is found that without getting 100% commitment from senior management nothing can be happened.  For any changes in the hotel or in any firm requires lots of efforts and commitment of the employees and the management. The changes can be easily be over ridden by handing the day to day business pressures. The hotel needs to educate its staffs through arranging workshops, learning and developmental program on continuous basis. The flow of information from top management to the every employee should be clear and their decisions should align exactly to its green practice by the staffs. It require a lot of time to source the organic products and finding supplier to supply fair trade food items in large quantity is also a  challenge. It takes considerable time to find new supplier to make deal with them. It takes almost three to four months to source and change a food items in a hotel.   For feasible plan, a hotel cannot go ahead alone.  It needs someone help to change its practices. In case of The hotel Cavendish, it worked closely with the  Considerate Hoteliers Association (CHA is a specific body formed and run by hoteliers to offer a central source to offer hints and tips, as well as keep up-to-date with current government legislation.) for feasible plans in the green practices.  Cavendish has setup a clear vision and focusing on it they achieved their goal in time and cost effective.

HR team of the hotel plays an important role in structuring and managing effective organizational practices. They should develop strategies for long lasting success and adopt latest trends in learning & development of the employees. Engage a team to deal with the emotions of the employees and to motivate them effectively. To get best result from an employee it is an imperative to manage their stress and difficult situations. For proven success there should be increment in personal productivity by 20-35% and teamwork by 15-35 %. An Emotional Intelligence (EI) Assessment should be Initiated and identify which skills need to improve in a particular employee. In the firm, recognize the importance of redefining and rethinking visions of the employees. Always keep update with the insights into the latest trends in talent management. To become green hotel, hotel needs meet all criteria of regulations mentioned by governments.  It is not always true that a new thing is appreciated by everyone. The introduction of new products and services brings combined reactions in the market. Some customers respond to the improved product in a positive way, some customers respond to it in a negative way and some customers give a neutral reaction. If the environmentally friendly initiatives are not able to create a positive impact on guest's perception and they    do not accept the changes which can lead to loss of business also.

Even though having great challenges but there are many motivational factors to take initiative for eco - friendly innovation:

  • Environmental benefits and building guest loyalty:  Definitely going green is giving a positive impact to the environments and hotel is creating a healthy environment for guest and as well as for others.  Customers, those who are conscious about these issues they will prefer to go green hotel. Hence eco friendly practices also helping hotels to differentiate themselves from competitors and creating guest loyalty.
  • Financial savings: As already is mentioned that due to total cost effect, the fair trade food are serving in comparatively cheaper price to the guests. People are taking less shrinkage food. Hence the quantity of food purchasing is also getting reduced. The mission of recycling and energy consumption helping the hotel to save its money. 
  • Increasing market share: Now more customers are getting awareness about the environment and they are prefer to go green hotel where they will get healthy food, healthy environment and total luxury facility.  Due to these differentiations and building of guest's loyalty, day by day, the frequency of check -in and check -out is increasing and its numbers. Hence it is resulting in increasing of market share.  
  • New revenue opportunities: Definitely, the innovation of environmentally friendly initiatives has opened up to new business opportunities. Due to increase in market share, the revenue figure is also increasing.
  • Marketing and public relation coverage: Any new initiates attract the customers. They want to experience the new things. Environmentally friendly initiatives are creating positive waves and give good marketing promotional and public relation coverage. 
  • Preempting government regulations: Government is also giving supports to the green hotels in implementing the environmentally friendly practices.   • Using indoor paints that are low or zero VOC (volatile organic compounds) or Green Seal Certified: Use of low volatile organic compounds is good for health.
  • Using T8 lamps in corridors is definitely going to save the energy consumption. 
  • Giving preferential treatment to vendors/suppliers who offer recycled products so that other vendor and supplier also get motivation to offer recycled products. 
  • Using of daily cleaning chemicals that have a MSDS health rating of “1” or less and/or Green Seal Certified will help to create a healthy environment in the hotel.
  • T8 lamps in back of house can help in conservation of energy.
  • Tracking generation of solid waste on a monthly basis is essential for planning of coming month's eco friendly initiative programs.
  • Recycling program in guest rooms: It is not only staffs of the hotel but also the guests in the hotel are also encouraged to join the recycling program of the hotel.
  • Recycling program in recreational areas is required in practicing of environmentally friendly initiatives.

3.3 Summary

In this chapter finding data are presented. The officials from Cavendish hotel has given insight data of the hotel which is collected from various resources. It has been observed that since 2007, Hotel Cavendish   decided to take environmentally friendly initiatives and taking help of Considerate Hotelier Association. Since then, Hotel Cavendish has changed its practices to become green hotel through conscious efforts of its management and dedicated employees. Hotel Cavendish has set an example in the hotel industry   that without compromising with luxury facility also a hotel can offer green approach to the customer. In the analysis of the above finding it is found that for green practices, a hotel need to invest significantly on short term basis. Changing the source of food is not an easy job. To identify a new supplier and negotiate with them, it takes almost three to four months. Sourcing fair trade food in large quantity from a single supplier is also not so easy. So there are some difficulties in adopting the green practices in the hotel but still should innovate the new way of approaches to become environmentally friendly. Employee of the firm plays a vital role in innovation. So the talents of the employees should be encouraged through various reward system. More than extrinsic reward, creativity employees strive for intrinsic rewards. So the employee's rewards system should be encouraged in the hotel and the creativity should be recognized by the management.
